Who am I

I am a cook, Bulliano, and since I can remember I have been practicing my skills as if I were a sorcerer, an eternal apprentice, always looking for new frontiers in the universe of cooking.

I was born in Buenos Aires (Ciudad Evita), I am of Italian-Spanish origin, I have developed my culinary art since 2002 in Argentina and the United Kingdom (where I obtained the NVQ).

One of my mentors in the UK, Chef Terry Laybourne, Culinary Ambassador for the North East of England in Newcastle Upon Tyne, has taught me the value of travel as the only tool to always improve. For this reason, I have worked in: the United States, Spain, Germany, Mexico, Austria, Switzerland.

In 2009 I participated in the training season at El Bulli, directed by Juli Soler, Albert Adrià and Ferran Adrià in Barcelona,(Spain) obtaining the title of Food Evolution.

My research on ancestral techniques began in 2012, while I was working in Mexico and Colombia, learning about aboriginal pre-Hispanic culinary techniques.

To reach a deep understanding of that culture, I have shared experiences with some Taitas from an Amazonian tribe. In this exotic environment, I searched for the origin of cooking and here I learned two concepts that have become the engine of all my research: the two-way relationship between Nature and cooking and the return of the elements.
